and remained the name of the company that today is engaged in food, livestock and products
wholesale.

SOCOTRA AFTER CLEANING AND PAINTING
We have done a strong Maintenance and cleaning service-driven reputation for

RENOVATING AND REBUILDING – PUTTING NEW LIFE INTO OLD BONES
The process of taking a shell that had been gutted and mothballed and left empty
for years and turning that space into a beautiful place filled with energy and
function was both a labour of love and more often of frustration for Socotra. The
building we chose used to be a supermarket, but when the original tenant moved
out everything – pipes, cables, lighting, doors, and more – had been stripped out
for scrap value. We weren’t faced with the task of just a simple repainting and
adding a few walls – we literally needed to do an autopsy on the building to know
what was there, behind the existing walls and even under the floor. We needed to
determine what is anything was salvageable, and what we needed to just abandon
and run anew. Here are some of the major things we did in bringing our building
back from the graveyard:
PLUMBING
- Running a flexible camera under ground to map all the under-floor drains and hidden pipes
- Repairing leaky pipes and broken drains
- Clearing clogged drains blocked by debris and collapsed flooring
- Installing new shut-off and flow control valves throughout the building
- Installing new water and drain line piping
- Upgrading plumbing fixtures and faucets, renovating the existing washrooms and building 2
additional ones - Installing commercial use sinks and washing equipment, with supportive plumbing and drainage
- Assessing and removing walls to access existing plumbing or to install new pipes
- Assembling and placement of new drainpipes
- Running new intake and exhaust venting for food prep areas where water is used
- Guiding and attaching new pipes integrated with existing plumbing
FLOORING AND SHELVING AFTER RENOVATION
Once Socotra had torn up the floor and walls, run new plumbing and
electricals, and closed everything up again, we also re-partitioned the main floor
area, creating a warehouse section capable of storing over 60-100 metric tons
of green coffee beans, plus a host of supplies and equipment, and then hiding it
all from general sight behind custom built shelving and uniquely designed
service bars
THE GOLD DOME – CUSTOM BUILT FOR SOCOTRA
One of the main sections in our building is a full bakery featuring artisan breads and pastries
made fresh twice daily, as well as cookies, cakes and other baked goods crafted by our Master
Baker. Socotra has a variety of specialty ovens for different baked items, including a cookie
making machine that can produce up to 120,000 cookies per day, and coffee Roasters than can
produce 100 kg per hour of roasted beans and a pita bread machine that can make and bake
6000 pita loaves per and a double decked dual gas oven for flat breads and pies. But the real star
of the bakery is our Gold Dome, a massive custom-built gas fired clay oven that weighs a
whopping 1,700kg, covered in gold tiles (hence its name), and featuring cast iron double doors.
Featuring Japanese craftsmanship and technology, this oven can operate like a traditional
tandoor and is capable of baking not just breads and pizzas, but also a variety of select meat, fish,
and poultry dishes, and aromatic woods and spices can be placed inside the cavernous oven to
lend particular flavours and aromas to whatever is being baked. The Gold Dome is a one-of-a-
kind oven that more correctly belongs in a palace, but you can see it and enjoy its unique qualities
only at Socotra.
HVAC SYSTEMS
When we first got the building, the existing heating and cooling systems had
been gutted, the commercial refrigeration compressors were gone, and only
dead-end air exchange vents and conduits remained. For our coffee roasting
equipment, our bakery, and our commercial kitchen areas we needed to custom
build and install a number of commercial ventilation hoods with (in the kitchen
especially) fire suppression systems, and properly calibrated air flow chambers
to allow for the exhaust of heated air, all built to code. This exercise alone took
almost a year to complete, so onerous was the engineering required.
THE GLASS WALL
While the HVAC is largely hidden from view, we wanted our main operating
areas – our bakery and our coffee roastery – to be open and visible. To this end
we had a special dividing wall custom built with heat resistant safety glass and
encased in aluminum framing erected around the roastery and packaging area,
and the bakery. This way our clientele can watch Socotra do its magic while
enjoying our excellent foods and our delicious beverages, and especially our
breads and pastries and our coffee baked and roasted right before their eyes.
